Arrange the eggplant slices in a single layer in an air fryer basket.
Coat them with olive oil and season them with Italian seasoning, salt, and pepper.
Preheat the air fryer at 370ºF/180ºC for 5 minutes.
Place the air fryer basket with eggplant slices and air fry them at 370ºF/180ºC for 8-10 minutes until golden brown.
Take out the air fryer basket and top them with 1-2 tablespoons of marinara sauce.
Then top the sauce with mozzarella and parmesan cheese.
Bake them for another 2-3 minutes until the cheese is melted and golden brown.
