How to cut Zucchini for the air fryer zucchini boats?
This is the most time-consuming part of this recipe. First, wash zucchini thoroughly. Next, cut zucchini lengthwise in half for making boats. Then, with a spoon, scoop out the flesh (seed) of the zucchini leaving ¼ inch thickness to hold stiffing.
If you find it hard to scoop out the flesh of the zucchini to make a boat, use a knife to loosen the flesh up. Then use a spoon to scoop out the flesh. Finally, scoop out the flesh until you have enough room for stuffing.

Cut the zucchini lengthwise in half.

Scoop out the flesh to make a zucchini boat with a spoon.
Spray zucchini boats with olive oil.

Fill the zucchini boats with marinara or pizza sauce.

Add yellow pepper or your favorite toppings.

Top the zucchini boats with mozzarella cheese.
Preheat the Air fryer to 370°F for 5 minutes.
Spray the air fryer basket with olive oil.
