Today, let’s make crispy Air Fryer rice paper spring rolls! Yes, Rice paper spring rolls. These sautéed vegetables and vermicelli-filled spring rolls (Lumpia) are delicious and easy to make.
They are our favorite appetizers or snacks in our house. Kids love it too, because I stuff them with vermicelli. It’s a great way to feed vegetables to kids.
I quickly assemble rice paper spring rolls whenever I run out of ideas of what to cook for after-school snacks. This recipe is vegan and vegetarian-friendly.
You can also play around with the filling. Make spring rolls with whatever filling you like, and it will come out tasty and crisp in every bite.

Rice paper spring rolls are a healthy alternative to the classic flour-based spring roll wrapper that you find in the grocery store’s frozen section. Rice paper spring roll is a great way to enjoy spring roll if you are on a gluten-free diet.
Air Fryer vegan rice paper spring is also great if you watch your weight. There are only 20 calories in one rice paper sheet.
Rice paper wrappers are easy to store as they can be purchased dry, and they store well without the need to refrigerate them. You can also replace them with high-calorie bread if you watch your weight. I always have rice paper in my pantry. I make gluten-free samosa with rice paper, summer rolls, and rice paper dumplings.
Rice paper wrapper vs. Traditional Spring roll wrapper
Vietnamese spring rolls served in restaurants are made with a flour-based wrapper. You can find Vietnamese spring roll wrappers in a frozen grocery store section.
Spring rolls wrappers are usually vegan as they contain flour, salt, and water. But sometimes, vegetarian spring rolls contain eggs in the wrapper. So, if you are vegan or vegetarian but do not eat eggs, check the ingredient list before purchasing a spring roll wrapper.
Ingredients used for making Vegan/Vegetarian Air Fryer Rice Paper Spring Rolls
Spring rolls usually have an only vegetable filling. The most common ones are cabbage, carrot, and bean sprout, but you can also include mushrooms, zucchini, sweet peppers, and celery.
People also include meat along with vegetables as a filling for spring rolls. Most vegan spring rolls include vegetables, tofu, and Vegetarian spring rolls include vegetables and panner as filling.
For this recipe, I have used vegetables and vermicelli noddle as filling. My kids ‘ absolute favorite is this no-onion, no garlic spring rolls with rice noodles. It is a great way to get them to eat vegetables.
Here are the ingredients I have used to make Vegan Air Fryer Rice Paper Spring Roll
- Cabbage
- Spinach
- Zucchini
- Red bell pepper
- Rice Paper Wrapper
- Black pepper
- Grated ginger
- Spring onion Optional
- Soy sauce
- Vermicelli or rice noodle
And Air Fryer. You can cook these crispy rice paper spring rolls in any model of Air Fryer – basket model, tray model, or instant pot crisp lid. They will come out crispy with little oil.
How to prepare vegetables for Air Fryer Rice Paper Spring rolls?
- Take a few layers of cabbage. First, wash and pat dry them. Then, cut them into long shreds or grate them using a grater.
- Wash, and cut red bell pepper and zucchini into long thin shreds.
- Wash spinach leaves.
Cook veggie filling
- Heat a frying pan or skillet on medium heat, and then add 1 tbsp of sesame oil.
- Add cut vegetables and spinach leaves. Stir and cook them for a few minutes.
- Once they are cooked, add salt and freshly ground black pepper to taste. Then add soy sauce or tamari (gluten-free option).
- Stir and cook them for 1-2 minutes.
How to cook vermicelli noddle?
To cook vermicelli noddle, follow the instructions given on the packaging. Here is how to cook vermicelli noddle for rice paper spring rolls.
- Take 2-3 cups of water in a saucepan and bring them to a boil.
- Turn off the heat.
- Now add a bunch of vermicelli noodles from the packet to the boiled water.
- Cover the saucepan with a lid.
- After the first 2-3 minutes, take a fork and try to separate noodles in a saucepan to help in even cooking.
- Let the vermicelli noodle cook for 10 minutes.
- After 10 minutes, drain the water and run cold water over the cooked noodle to stop them from further cooking.
Mix Noddle and sautéed Vegetables (optional step)
Add them to sauteed vegetables once the noodle is cooked and mix them well. This step is optional. You can keep vegetables and vermicelli noddle in a separate bowl and fill them one by one when you are assembling spring rolls. I mixed sauteed vegetables and noodles for ease of filling spring rolls.
How to assemble Rice Paper Spring Rolls?
Filling rice paper spring rolls is easy if you pay attention to a few steps. Follow this step-by-step instruction to assemble rice paper spring rolls.
Important points to consider when working with rice paper
- Rice paper comes as a dry paper sheet. So, always use a dry hand to take out one sheet at a time from the packaging. If you touch it with a wet hand, it will activate and stick to each other.
- Read the step-by-step instruction given on the rice paper packaging. This is very important because it will guide you on how many minutes you need to submerge them in water to get them ready for filling.
- If you use 100% rice paper, you need to submerge rice paper in water for 7-10 seconds. However, the rice paper wrappers I used in this recipe have tapioca, so I only submerged them for 5 seconds.
- Some rice paper brands require lesser time in water (5-6 seconds). The amount of time they need in water depends mainly on the Tapioca starch content of the rice paper. The more tapioca content, the lesser time it needs in the water.
- Be gentle when transferring wet rice paper to the working surface.
- As a working surface, use parchment paper or a glass plate. DO NOT use a wooden chopping board as a working surface because wet rice paper will stick to it and will be hard for you to work with. I had made this mistake when I made rice paper spring roll for the first time.
- Dry the working surface once you are done rolling one spring roll.
- Place rolled rice paper spring rolls directly on an oil sprayed Air Fryer basket.
- If you want first to assemble all the spring rolls and later transfer them to an air fryer basket, use an oil sprayed glass plate.
- Let the sauteed vegetables and noodles cool down entirely before assembling spring rolls.
Step-by-step Process of Assembling Rice paper Spring rolls
- Fill a large shallow pan with warm water (warm tap water will do). Make sure to take a large enough pan to soak one rice paper sheet completely.
- Use a glass dinnerware plate as a working surface for rolling spring rolls.
- Submerge rice paper dry sheet in water for 5 seconds.
- Take them out gently and lay them flat on a glass plate.
- Let them lay on a working surface for 30 seconds to dry them out a bit before you start rolling. (If rice paper is too wet, it won’t crisp up nicely)
Step-by-step process
- Place 2-3 tablespoons of vegetable + noodle mix in the lower third middle of the rice paper. (Adjust the amount of filling depending on the size of rice paper you are working with). The standard size rice paper will hold 2-3 tablespoons of fillings.
- Fold both sides toward the middle first, as shown in the picture.
- Then fold the bottom seam upward over the filling tightly.
- Now use your fingers to tuck the filling in as you roll the rice paper all the way up.
- Close the bottom tightly when you are done rolling.
- Place rolled rice paper spring rolls on an oil sprayed glass plate.
- Finish rolling the rest of the spring rolls.
Air Frying Spring rolls
- Spray the crisp tray with cooking oil and place it on the air fryer basket.
- Arrange rolled spring rolls in a single row on a crisp tray in the air fryer.
- Spray them with cooking oil.
- Cook them in preheated air fryer basket at 400°F for 10-12 minutes, flipping them in between.
Dipping sauce for Rice Paper Spring rolls
I love soy sauce dipping sauce for rice paper spring rolls. But you can use sweet chili sauce, peanut sauce, or any other sauce you like.
Soy sauce dipping sauce for rice paper spring rolls
- 1 Tbsp soy sauce
- ½ Tbsp white vinegar
- 1 Tbsp white sugar
- 1 minced garlic clove (optional)
- ½ cup boiling water
Mix the ingredient together in a bowl and sprinkle roaster sesame seeds while serving with spring rolls.
FAQs
Can you Reheat Spring rolls in Air Fryer?
Rice paper spring rolls can be reheated in air fryer at 360°F for 4-5 minutes. but it won’t be as crispy as the freshly made. If you are planning to make spring rolls in advance, make sure to cool them on a rack so air can travel around the spring rolls and won’t turn them soggy. Reheat spring rolls in Air Fryer at 360°F for 4-5 minutes when you are ready.
How long to cook Vegan Rice paper Spring rolls in Air Fryer?
The time and temperature for cooking rice paper spring rolls in the air fryer depend on the type and model of air fryer you have. For example, I have #Gourmia Air Fryer, and it took 10-12 minutes at 400°F to turn them into crispy spring rolls.
If you are making spring rolls for the first time in the air fryer, take this time as a general guideline and check your spring roll before 10 minutes to find an optimum cooking time for your recipe.
Can you store leftover rice paper spring rolls in the refrigerator?
You can, but rice paper spring rolls taste best when eaten immediately after cooking. It will lose its crispness if you refrigerate leftover spring rolls.
Can you make Rice paper spring rolls in advance?
I would not recommend making rice paper spring rolls in advance, but you can undoubtedly prepare vegetables and noodle filling in advance and refrigerate them until use. Then, bring them out of the refrigerator 1 hour before you are ready to assemble spring rolls.
