Ingredients used in making Gluten-free Air Fryer Rice Paper Samosas
For making rice paper samosas, you need
- Potatoes
- Peas
- Ginger
- Cumin seeds
- Garam Masala
- Fresh cilantro leaves
- Salt
- Dry mango Powder or Lemon Juice
- Oil
- Water
- Rice Paper

- Coriander seeds

How to make stuffing for Air Fryer Rice Paper Samosa?
Making a stuffing for samosas is easy but does require many Indian spices for that authentic flavor. Of course, you can also do without some of the spices, but it won’t taste the same. So, add all the spices listed below if you have them.
To make Rice paper samosa stuffing
Boil potatoes and chop them into small pieces.
Now in a Sautee pan, heat oil and add cumin seeds, ginger paste, fennel seeds, and crushed coriander seeds. Cook the spices until fragrant or for 2-3 minutes.
Then add boiled potato pieces and peas.
Add salt, garam masala, and dry mango powder or lemon juice.
Now use a fork to semi-smash potato pieces while mixing them with spices.
Mix all the ingredients well and let it cook for 2-3 minutes.
Add 1-2 tablespoons of water and mix well. Cook them for another minute and turn the heat off.
Add chopped cilantro leaves and mix well.
Let the mixture cool down completely.
How to fill Stuffing in Rice Paper?
Read the instruction on rice paper packaging carefully to determine how long you need to deep rice paper sheets in water to make them pliable.
For my rice paper brand, I needed to keep them for 5 seconds in water. Depending upon the tapioca content of the rice paper you are using, you may need to keep them a little longer or less.
Transfer the wet rice paper to a working surface. Use a glass plate for filling your samosas. Rice paper tends to stick to a wooden chopping board. So, use a glass plate as a working surface.
Now fold a wet circle of rice paper in half.
Put 1-2 tablespoons of potato-peas mixture in one corner of folded rice paper.
Then fold them into the triangle and seal the edges by pressing them with a fork.
Place the filled rice paper samosa into greased glass plate or greased air fryer basket.
Finish filling the rest of the rice paper samosas.
How to Air fry Rice Paper Samosa?
Grease the air fryer basket with cooking spray.
Arrange rice paper samosas in a single layer in an air fryer basket.
Spray them with cooking oil.
Air Fry them at 370°F for 10 minutes, flipping them halfway through.
Pro Tips for Crispy and authentic Indian Samosa flavor
- For authentic Indian samosa flavor, add all the Indian spices listed above. Fennel seeds and coriander seeds are essential to dry spices, and they add great flavor to samosa.
- Do not overcrowd the air fryer basket. Instead, cook them in batches if you need to cook more.
- When working with rice paper, make sure you read the rice paper instructions carefully. Follow the instruction on how long you need to deep rice paper in water to make them pliable. More the tapioca content of the rice paper, lesser you have to keep them in the water.
- Once you transfer the wet rice paper sheet to the working surface, wait for 30 seconds for them to absorb water and dry out a little before starting filling and folding.
- Filled rice paper samosas are sticky, so make sure you put them on a greased plate and transfer them directly into greased air fryer basket or tray.
- Always boil potatoes first, then cut them into pieces to prepare the stuffing.
- Smashing them works for samosa filling if you do not want to cut boiled potatoes.
- Seal the edges of rice paper properly so the stuffing doesn’t come out while cooking.

Homemade Tamarind Chutney
Store-bought Min Chutney or Mango Chutney
Green Coriander chutney
- 2 small bunches of coriander or cilantro 50-60 gms each (washed and hard stem removed)
- 1-3 green chilies
- 1 inch Ginger piece
- Salt to taste
- 2 teaspoon lemon juice
- ¼ cup water
Add all the ingredients to a mixture and turn them into a paste.
Tamarind chutney
- ½ cup Tamarind (dated)
- ½ cup dates (dated)
- ½ cup jaggary
- ½ tsp cumin seeds
- ½ tsp fennel seeds
- 1 tsp chili powder
- Salt to taste
- 2 cups water (add more water to adjust consistency)
Soak tamarind and dates in warm water for 2 hours. Once they soften, add tamarind, dates, and the rest of the ingredients to a blender and blend them to make a paste.
Then strain the paste through a sieve.
Store the tamarind chutney in a glass jar and refrigerate. You can store it in the refrigerator for 10 days. Or freeze them for 3 months for later use.
