Crispy Air Fryer Cassava Chips or Yuca Chips
Cassava is a starchy root vegetable that tastes even better than crunchy homemade potato chips. These air fryer cassava chips have a nutty flavor and come out perfectly crispy when cooked in the air fryer.
Cassava, also known as Yuca or Mogo, is native to the Caribbean and Africa. It is a significant source of carbs and calories for them.
This vegetable is a long starchy root with fibrous skin. It is an essential ingredient in many Latin American cruises. In addition, processed cassava products like tapioca flour are often used in gluten-free cooking.
Cassava is rich in carbohydrates and contains essential vitamins and minerals like vitamin C, riboflavin, niacin, and thiamine.
Out of all the cassava recipes, my favorite is Cassava chips and Cassava fries. Whether they are Air fryer Cassava chips or deep-fried, I enjoy the crunchiness and nutty flavor of cassava chips over potato chips.

What is Cassava?
Cassava, or Yuca or Mogo, has brown skin and white flesh. The width and length of cassava are almost similar to sweet potato. Cassava is also known as manioc, and tapioca.
Raw cassava has snow-white flesh, but it turns translucent yellow when cooked. Cassava must be peeled and cooked before being eaten, as raw cassava is poisonous. It is widely available now in major grocery stores, and they are more expensive than russet potatoes.
Cassava or Yuca can be made into chips, fries, yuca con mojo, or added to the stew. You can make mashed cassava the same as you do mashed potatoes.
Ingredients used to make Air Fryer Cassava chips
Cassava chips or Yuca chips make an excellent snack when craving something crunchy. You can simply air fry these with salt and season them later like I did in this recipe, or add seasonings before air frying. I like to air fry it only with salt as kids do not prefer additional seasoning on their cassava chips.
To make these simple air fryer cassava chips, I have used
- Cassava root vegetable
- Salt
- Paprika
And you need a mandolin or sharp knife to slice cassava thinly. Then, you can fry them in any model of Air fryer – basket, tray, or Instant pot crisp lid.
How to make Air Fryer Cassava Chips or Yuca Chips?
Cassava chips are easy to make. Here is my step-by-step recipe.
Peel the cassava root vegetable with a peeler.
Use a mandolin or sharp knife to make thin slices of cassava. The cassava root vegetable is tough to work with. You will need a lot of hand pressure to slice them with a mandolin; that’s why I have used a knife.
Soak cassava slices in cold water for about 15 minutes.
Then completely dry cassava slices.
Coat cassava slices with olive oil and salt. You can add any seasoning like paprika, garlic powder, or pepper at this step if you want.
Now arrange cassava slices in an air fryer basket in one layer.
Air Fry them at 370°F/185°C for 8-10 minutes and shake them halfway through.
Once cooked, let them cool down. They will crips up while resting.
You can enjoy cooked cassava chips as is or add any seasoning when they are out of the air fryer and still warm.

Tips for making Air fryer cassava chips
Use Mandolin to cut even size cassava slices. Even size slices will cook evenly in the air fryer.
After you soak cassava slices in cold water, it is very important that you dry them thoroughly before air frying. They won’t crisp up nicely if any moisture is left after soaking in water.
You can deep fry them following this same recipe.
Before air frying your chips, you can add any seasonings (garlic powder, paprika, dry oregano, dry basil) you like.
Do not overcrowd the air fryer with cassava slices. If you need to do more, do them in batches.
Temperature and time of cooking vary between air fryer models. So, make sure to check on your chips before time is up. You do not want to burn your cassava chips.

You can store cassava chips in an airtight container for 5-6 days. But I am sure it won’t even last two days. They are so deliciously crips and healthy that you can’t stop munching them.

Cassava can be dangerous if eaten raw in large quantities or not cooked properly. This is because raw cassava contains a chemical named cyanogenic glycosides. And if cassava is eaten raw, cyanide releases into your body, and it can be dangerous. Yet, cassava is a staple root crop that feeds millions of folks in developing countries.
Cassava roots should be soaked in water and boiled, baked, or fried to remove the poisonous chemical. The water after boiling cassava should be discarded completely. Frozen cassava should also be boiled before use.
